There are two questions people always ask when they find out I'm a vegetarian - Why? and What do you eat? I'll leave the 1st question for now, but I thought it would be fun to tackle the 2nd with a picture of what I eat for dinner every night - the good (pre-planned and homecooked), the bad ("all we have to eat is _____!"), and the ugly (road trip!). In the interest of full disclosure, I'm a lacto-ovo-pesco vegetarian, so from time-to-time you'll see some fish dishes.

Green Bean Salad
Thiswasadaptedfromthis. I find so many good recipes from this blog! In Heidi Swanson's write-up, she said in her picture she under-dressed the beans. I think I have the opposite problem!
